Vaarta brings refined Indian street food to Goa

Vaarta, a new restaurant set in a restored 160-year-old Goan home in Sangolda, is introducing a more considered approach to Indian street food, combining heritage design with an interactive dining format.

Positioned as a fine-dining yet accessible concept, Vaarta moves away from conventional chaat formats and focuses on creating a slower, more immersive experience. The offering centres on live and interactive elements, including a Puchka counter where diners can customise fillings and flavoured waters, and a “Make Your Own Barf Ka Gola” cart served tableside.

The property retains its original architectural features, including arches, vintage windows, and aged flooring, with minimal structural changes. Design elements such as bakelite switches and interconnected lighting aim to preserve the home’s original character while supporting the dining experience.

Neha Mehta, Founder, Vaarta, said, “Vaarta was born from a simple longing, the kind of food that carries memory and invites conversation. I didn’t want to recreate street food; I wanted to give it the space and respect it deserves.”

The menu draws from street food traditions across India, spanning small plates, regional mains, and desserts, alongside a beverage programme inspired by familiar Indian flavours. Vaarta enters Goa’s dining landscape with a concept that places equal emphasis on food, memory, and setting.
